Ingredients of Boondi ke Ladoo (Laddu) 500 gms gram flour; 1 litre water or milk; 750 gms ghee (for frying) 750 gms sugar; 3 1/2 cups water; 10-12 drops orange color; 10-12 saffron flakes, soaked; 50 gms cashew nuts, chopped; 50 gms raisins; 10 cardamoms , peeled; boondi strainer or fryer of medium sized holes Melt the ghee and fry the cashews broken into tiny bits. In a mixing bowl, take the powdered items and pour the melted ghee, add cashews to it. Mix well with a spatula. If its hot, let it wait until you are able to handle the heat and start making laddus. Tastes great with the wonderful roasted moong dal smell. Soak tamarind in one and half cups of water in a small bowl and add a pinch of turmeric powder and a little salt. [2] 2. Squeeze and filter the tamarind juice and keep to one side. 3. Smash the tomato add to the tamarind juice. 4. Grind the pepper, cumin, garlic and one red chili, so that it gives a dry powder. [3] Fold the aluminium foil nice and straight, place the oil stainer on top of it, fold the edges, and seal tightly. 2. Make small holes using a pin. Make sure the holes are pretty good for boondi drops, now the boondi jaara is ready. 3. In a bowl add 1 cup of Besan, 1 pinch salt, and a pinch baking soda, and mix well. 4. firstly, in a large kadai heat ½ cup ghee and add 2 cup besan. roast on low flame until the besan is well combined with ghee. make sure to use coarse besan for grainy texture. continue to roast on low flame. if the mixture turns dry, add a tbsp of more ghee. after 20 minutes, the besan starts to release ghee. 16. Mix well to incorporate the ghee in the gond with the rest of the mixture. 17. Roll to balls when the mixture is slightly hot. If needed pour some hot ghee if you have a trouble binding them. I did not use any extra. Store gond ke laddu in a air tight jar and use up to a month. Use 60% of garlic and 40% of ginger because ginger taste is strong. Soak cauliflower in warm water and add a pinch of salt to it, leave it for 15 minutes and then rinse, this will remove the tiny insects present in cauliflower. Boiled potatoes can be stored in the refrigerator and used while making dough for rotis or naan.
